Hi Taylor, I heard you say you have gluten intolerance. My mom has that, and she gained weight eating many gluten free products because rice and potato flour has a high glycemic index. She lost tons of weight when she started making her own food with almond flour, garbanzo bean flour, and coconut flour. You're thin and healthy so it's probably not a big deal for your metabolism. But if you ever find that you're gaining weight or your blood sugar is off, the gluten free flours would be the first thing I would change.

I used to work as a cook in a Japanese restaurant and we made the Dashi (broth) with Shiitake Mushrooms and Konbu. The mushrooms are used instead of the bonito flakes to keep it vegetarian whilst still maintaining the meaty flavour (it creates more of a meaty than fishy flavour).

Hello, I have a question so I hope you will answer it. :) I was wondering, what do you do with all the excess food? I've found that when making meals for one I always have lots of extra food because of how much comes with food products in the store. Thanks :D

There is apparently a pizza restaurant in Tokyo, that has gluten and vegan free pizza. I not really sure, but my friend was telling me about it, from when she went to Japan. I think it was called Pizzakaya. You should look it up.

it is just hard to be vegan and vegetarian in an Asian country in general b/c of what they offer in restaurant or what not. Vegetarian ok maybe, but i don't think you have many (or any) options if u are vegan.

I just made some vegan chili yesterday too. I usually make it with beef or turkey (my mom wouldn't eat it if I didn't). It feels like something's missing without the meat. I will try adding some corn to it next time. I think it will make it more delectable. Thank you for sharing about your diet.
