Tonkotsu is now my go to ramne in the US becuase not many have Shio. there are now many new ramen restaurants here in denver but still don't compare to japan...and I still just order soups base and noodles...i prefer the thin noodles as well.

giggles Tonkotsu could easily be made here in the south. Pork bone broth, green onions, mustard greens and chili, pork and mushrooms. Those are such country flavors. If I was in Japan, I'd feel right at home!
