It would be nice for Anthony to somewhere acknowledge that bluefin tuna is nearly extinct, which is a major issue for the environment and the very fish market in this video. At least this chef doesnt waste the headmeat.

im korean and koreans consider fresh fish the best fish. Its just matter of opinion. Fresh fish might considered to have no taste and hard in japan but in korea that hardness that texture is a real delicacy.
