The iron wouldn't make the edge... the iron forms the body and steel would form the edge, most Japanese knives are San mai

I wish I had a pair of sashimi knives. such an amazing job the way they make them knives. great job👍
-
It takes a lot of skill and practice to get to the point where you move steel that fast, even with a power hammer.
-
..if only Americans where simple creatures like the Japanese it would be so much better.. sigh
-
Narrator should know more about what he is talking about.

Uh, Kansai is not a prefecture. It is a region. The city of Sakai is in the Prefecture of Osaka (Osaka-fu) (Osaka-shi is also the largest city in Osaka pref.)
-
You really need to get your knife terminology straightened out.
-
Its amazing that its so hot he has to use tongs to touch it........ Come on...
-
hmmm... I lived in Japan for 5 years and when I was "eating Japan" I did things completely different
-
What a freaking master craftsman! These are the people we should admire and I truly do!!! Come to L.A. and I will introduce you to a beautiful Japanese girl that loves your art!
-
it's called "sashimi" not "shishimi"
-
It is called a Yanagi not a sashimi knife :P. Very nice video tough!
-
it's not a "hilt", it's called the "tang", which is inserted in the handle. Hilts are normally on knives made as weapons.
