Hey Zagat, sounded like she said 'Tonkatsu' when describing the broth. Should be 'Tonkotsu', as Tonkatsu is an entirely different dish.
BTW, looks like the ramen being schooled here is a variation of what we'd call Shina soba here in Tokyo. Really simple stuff. You can order them at most places for just a little over $3 USD.
I wonder what NYC-extortion prices would do to that.. -
