Ippudo, also known as Hakata Ippūdō in Japan, is a Japanese ramen restaurant chain. Often ranked among the top by ramen connoisseurs, it has garnered a 4/5 poop rating on JapaneseEats. Ippudo was first started in Fukuoka, Fukuoka by Shigemi Kawahara, the CEO of Chikaranomoto Company. "Ippudo" in direct translation means "one wind hall", and this is named because at the time, there were dark clouds over the Kyushu ramen industry, and the founder CEO Kawahara intended to "blow wind and revolutionise the era". The first restaurant opened in 1985, in the Daimyo District of Chuo Ward, in Fukuoka City. Gradually the number of restaurants expanded from regional areas to the whole of Japan, and the internationally with restaurants opening up in New York, Singapore, Hong Kong, and London. This location in this video is their flagship restaurant in Ginza, Tokyo, and is among the more fancier ramen-yas out there. If you like the most basic flavour, get the ‘white’ Shiromaru Classic, which comes with chashu, bean sprouts, scallions, egg, and tree mushrooms. This is Ippudo's original tonkotsu ramen since their inception. The rich and fragrant tonkotsu broth is cooked for over 18 hours and then left to "mature" for 24 hours to extract the pleasant, savory taste of pork. It is served with homemade Hakata-style thin and straight noodles which match with the broth perfectly. The ‘red’ Akamaru Modern ramen has a more intense and memorable soup base. The special blended miso paste and fragrant oil bring harmony and depth to the flavor of this bowl of ramen. The Shiromaru Classic ramen had the edge flavor wise, however. The Hakata Gyoza makes an excellent accompaniment, about a third smaller in size than the usual dumplings, still crispy and very juicy and moist on the inside, best eaten hot.
