This makes me miss my old private school. Since we were in Louisiana we had lots of local Cajun food (but not much seafood, just shrimp) and it was made from scratch since it wasn't government funded. I don't really know how the US could change its plan to make it better though- we have more allergies and picky kids and such.

Not just Japan I grew up in tropical island Trinidad went to private SDA school my lunch was like this also home cooked meals soups all from scratch and no pork since it was forbidden in the denomination. American system is very lazy n unhealthy I plan om cooking my sons meals he wont take school lunch. I was way more advance with this diet

Love japan .Japanese children are so lucky ..From young age they are taught to be conscious about what they eat/help in serving the food/ to keep the tables clean after they eat /not to waste food ..in short all good habits! and their parents/teachers / schools and all associated with cooking take great care to see that food is tasty /nutritious and artistic to look.

Question: Every kid gets the same lunch. So are allergies less common among kids in Japan or what. For example, I noticed they get milk. I saw everyone drinking their milk, no problem. In America there're bound to be some lactose intolerant kid who scream discrimination, so we have to have soy milk prepared separately for them. Then I saw bread. Well, there're some kid in whose parents are imposing a "gluten-free diet". No bread for them either. Then, a vegetarian kid, vegan kid and all sorts of religious sensitivities. This is why school lunches with one general menu isn't going to fit in the US.

Frankly, I'm rather confused as to the high proportion of milk served. One would think that there would be sufficient numbers of students who cannot digest lactose as to call its suitability to question. ('Lactose intolerant' is really an odd term--it assumes that digesting milk past weaning age is the norm, when in actuality some 60% of people worldwide lose some or all of their ability to digest milk, 90% in East Asia.)
Kindergartners and first graders may still retain some ability (after all, the traditional biological age for weaning humans was 5 years old, if another baby didn't come along) but it seems like it's just asking for trouble with older students.
In related thoughts, one would think it's past time for the U.S. government to ignore the dairy lobby and start providing a different source of protein, especially in areas where there are a lot of students who don't digest dairy well. Namely, people of nearly every ethnic group other than Caucasian. (Yeah, yeah, I know, some folks would call it racism to stop/decrease milk funding. cough*milk-lobby*cough But it's not racism when there's an actual metabolic difference. At the very least, offer yogurt, which is more digestible, if more meat is out of the question.) -
American kids are eating shit compared to everyother country and we just accept it sad.

at one of my schools we were able to choose some subjects we would like to have and one of them we picked was housekeeping / cooking. that was a lot of fun. we chose the dishes too, to a certain extent.
at another school on the other hand, I had a fucked up teacher who forced me to eat up. may that hag get hanged, drawn and quartered. -
If it's one thing I wish America did that japan had, is their school system (like everywhere else), and the transportation. America relies so much on cars when Japanese can live life from a train. America is think would then be much better but it is what it is I guess :P

Those fools, they don't understand it's not worth it to invest more than a few cents on children's food.
I mean the only option is to give kids highly processed food waste that's cooked in microwaves (because there's no enough money for staff to spend a few hours cooking).
Understand there's no other option, the nation will go bankrupt, and hey! as long as it's low fat and there is a serving of veggiesaka microwaved potatoesit's all good. -
"Leftovers put back into the cooking pots" and not one glove in sight. Again, Asian countries have no idea about the most basic of hygienic food practices.... The idea is a solid one but the execution makes my stomach turn.
