The owner of Matador is a food genius. Few years ago, there was a trend of beef bone ramen but tons of shops failed. It's hard to make a ramen with beef bone because it ends up too sweet. The problem with beef based Ramen is, that it might result in health issues (gout) when you eat it too often. Maybe also a reason why beef isn't used very often for Ramen.

how would you compare this with pho? vietnam beef noodle soup? Even tho the noodles are different, but a good bowl of pho is the best hangover cure. btw, just suscribed and keep up the good work!

Just wanted to say that I visited Matador last June after reading about it on your website. There was a very small lineup and I was the only non-Japanese there. It was the best bowl of ramen I had during my trip to Japan.

weird jap taste where beef stock fails. that's is messed up. prefer chicken or beef stock for soup based ramen any time.
