I'm surprised that you didn't taste some of the more regional foods in Tokyo. Edo-style unagi or kabayaki is one of the most delicious things I've ever had. There's also Monjayaki, Chanko Nabe, Fukagawa Don, etc. and the staple dishes you can find everywhere that was popularized in Edo are tempura and soba (tempura udon is ...heaven). Ramen and nigiri-zushi (sushi) are good choices, though, and fantastic ramen can be had for as little as 300 yen (~$3) in some places. I was very surprised had how cheap and wonderful the food was in Japan. Chicken yakitori can be had for like 100-150 yen (~$1-$1.50). And having izakaya food and drinks is a memorable experience.

I have to admit that the captioning systems you used were extremely fast. I love that you had captioning for your deaf viewership but to have it off the screen so fast, it was very difficult to keep up with what was going on.
