They don't even show the colossal sized claws since they're too expensive however if you dine in there you'll be able to order them. The reason why the plate is so expensive is the use of stone crab claw meet that wholesales for $26.00 a pound. In one of our previous videos that showed Chef Hiroyuki making a Chawanmushi with stone crab claw meat, the price was shown in the beginning of the video; he used the same meat from that video, added fresh tuna, salmon, mackerel and ikura to make this dish around $75 in materials, our cost. Multiply that by at least 3-4 times for a menu price and this dish would need to sell for around $200.00 to make it profitable. Instead of stone crab meat, you could choose other types of seafood that won't make this dish to expensive. まず、こいつのツラが気に入らない、あっちの人みたいだから。偏見はご勘弁。でも、他国で真面目に商売をする日本人なら、この程度の素材と技術で作った見た目もイマイチな食い物に、恥ずかしくて75ドル(約8000円)もの価格をつけないないだろう。コイツは、日本人のおもてなしの心をを知らないアメリカの善良な人を騙す詐欺師、中途半端な技術で一流を気取るインチキ料理人だと思います。

that's not a chirachi, I'm sushi chef too. I would pay $30 for your "chirachi" it's just a bowl of rice and fish on top no decoration really

Not worth $200 and i do omakase all over the SF Bay Area. The amount of ingredients use is nowhere near ~$150 at most respectable restaurants - 4 star plus on yelp.

i really appreciate the honesty in all these "behind the scenes" videos. basically putting it all out there, as to how everything is prepared, where it's procured, etc. I guess there will always be critics (yelp) but, next time I'm in Miami, I will def. check you guys out. I appreciate the videos, the tutorials, and the absolute honesty behind everything going on in this restaraunt. Thanks guys. Btw, that bowl looks very worth it.
